Beef Tips with Noodles


2 T. butter or vegetable oil
2 lbs. boneless cubed beef, rump or loin
1 t. salt
1/4 t. pepper
1/4 c. onion, chopped
1/4 c. fresh chives, chopped
1/2 c. red wine
1½ c. sour cream
1 c. sliced mushrooms (optional)

Melt the butter in a skillet and sauté the beef cubes until lightly browned. Season with salt and pepper. Remove the meat and add the onions, chives and mushrooms and cook for 5 minutes. Add 1/2 cup wine or water to deglaze the pan. When heated, stir in the sour cream and add the beef cubes, stirring until smooth and heated thoroughly.

Serve over noodles
