Baked Cod with Grapefruit


2 pounds cod fillets, fresh or frozen
1 c. grapefruit sections, fresh, membranes removed or canned sections
3/4 t. salt
1/8 t. pepper
1 c. bread crumbs
1/4 c. butter or margarine, melted
1/2 t. thyme leaves

Preheat oven to 350° F. Section grapefruit, squeezing a few sections to collect juice. Brush cod fillets generously with grapefruit juice. Sprinkle with salt and pepper and place in 12″ x 8″ baking pan. In a small bowl, combine bread crumbs, melted butter and thyme. Sprinkle over fish. Arrange the remaining grapefruit sections over bread crumbs.

Bake 25-30 minutes or until fish flakes easily.
