2 pounds firm tomatoes, cored and sliced
2 med. onions, sliced
2 T chopped herbs (dill, chives, oregano, parsley, thyme, etc.)
1/2 c. salad oil
1/2 c. cider vinegar
1/4 c. white whine
1/4 c. granulated sugar
1/2 t. salt
several dashes freshly ground pepper
fresh parsley for garnish
Put the tomatoes in a large bowl. Place the onions on top. Sprinkle the herbs on top. In a small bowl, blend the oil, vinegar, wine, sugar, salt, and pepper with a wire whisk until all the sugar is dissolved. Pour over the tomatoes and onions.
Cover with plastic wrap and refrigerate for several hours. Serve chilled, garnished with fresh parsley.
