Zucchini Bread


3 eggs
1 c. salad oil
2 c. sugar
2 c. grated, peeled zucchini
3 t. vanilla extract
3 c. flour, sifted
1 t. salt
1 t. baking soda
3 t. cinnamon
1/2 t. baking powder
1/2 t. nutmeg
1/2 t. ground cloves
1½ c. walnuts or almonds, chopped

Beat eggs until light and foamy. Add oil, sugar, grated zucchini and vanilla extract. Mix lightly, but thoroughly. add flour, salt, soda, cinnamon, baking powder, nutmeg and cloves. Blend well and fold in nuts.

Put into 2 greased loaf pans and bake in a preheated 350° F. oven for one hour.

Makes 2 loaves
