Basic Chicken Stock


3 lbs chicken pieces, backs, wings, necks, etc., including hearts and gizzards but not livers
4 cups water
1½ teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon thyme
pinch of tarragon
2 celery stalks
2 carrots
1 small onion, halved with skin

Put all ingredients in a stockpot and bring to a boil. Reduce heat to low and simmer for 1 hour. Strain. Cool. Refrigerate, or freeze for future use.
