1 cup hash browns
2 teaspoons onions, chopped
2 teaspoons green peppers, chopped
1½ cup browned sausage
4 (10″) flour tortillas, warmed
3/4 cup shredded cheddar cheese
sour cream, optional
Fry hash browns according to package directions; set aside.
Beat eggs; add onions and peppers. Cook and stir until eggs are set. Remove from heat. Add hash browns and sausage. Stir gently.
Place approximately 3/4 cup of filling on each tortilla; top with cheese. Roll up and place on greased baking sheet.
Bake at 350° F. for 15-20 minutes or until heated thoroughly.
Serve with salsa and sour cream.
