2 cups tomatoes; seeded, minced
1/2 cup Smoked mozzarella; diced
1/4 cup arugula leaves; finely shredded
6 slices Bacon; cooked and crumbled
1/4 cup sweet onion; minced
2 tablespoons Olive oil
2 teaspoons Balsamic vinegar
Salt; to taste
Freshly-ground black pepper; to taste
24 Outer bibb lettuce leaves; washed, patted dry
In a bowl, toss together tomatoes, mozzarella, arugula, bacon, onion, olive oil, vinegar, and salt and pepper to taste.
Spoon mixture into lettuce leaves and serve immediately.
