3 kiwis; peeled
Use a zester to remove thin outer layer of orange zest in strips and set aside. Remove peel and outer white membrane from oranges with a sharp paring knife. Slice oranges into 1/4-inch slices.
In a 1-quart saucepan, combine sugar and water and place over moderate heat. Cook, stirring, until sugar dissolves. Boil 1 minute and add orange zest. Simmer for 1 minute. Remove from heat and drain.
Peel kiwis and slice in 1/4-inch thick slices. In a medium rectangular serving dish (approximately 12- by 6-inches), arrange overlapping slices, alternating oranges and kiwi. Garnish with cooled sweetened orange zest.
