Watermelon Granita


6 cups peeled and seeded watermelon chunks
1/2 cup sugar
1 cup water
2 tablespoons lime juice

Combine sugar and water in a small saucepan. Bring to a boil and boil until sugar dissolves.

Use a blender, food processor, or wand to puree watermelon.

Transfer the watermelon puree to a mixing bowl and add the simple syrup and lime juice. Stir until combined.

Transfer the mixture to shallow container and freeze for 30 minutes.

Remove the bowl from the freezer and use a fork to scrape any ice crystals from the sides of the bowl. Stir to incorporate the crystals. Return to the freezer.

Repeat this scraping procedure every so often for about 4 hours, or until the consistency is like snow cones when scraped with a fork or spoon.

Scrape into bowls and serve.

6 – 8 servings

Note: I only use 1/4 cup sugar. The additional 1/4 cup of sugar will help it not freeze as solid.

If frozen solid just sit out 30 minutes or scrape with a fork or spoon.

Up to 1 cup alcohol (vodka, triple sec, etc.) can be added. It will not freeze as solid with the alcohol. It won’t freeze at all if you add too much alcohol.
