1 cup Buttermilk
1/2 cup Sour cream
1/4 cup Cider vinegar
1 clove garlic; peeled, minced fine
2 tablespoons scallions; minced fine
2 tablespoons fresh parsley; minced
1/2 teaspoon Freshly-ground black pepper
1/4 teaspoon Salt
Mix all ingredients by shaking in 1-quart jar with a tight-fitting lid.
Refrigerate until ready to serve. Shake well before dressing.

1/2 cup white wine vinegar
1/4 cup frozen orange juice concentrate; thawed
2 tablespoons fresh parsley; chopped
4 teaspoons lemon peel; grated
4 teaspoons orange peel; grated
1 cup vegetable oil
Combine vinegar, orange juice concentrate, parsley, lemon peel and orange peel in small bowl. Gradually whisk in oil.

1/2 teaspoon shallots; minced
1/2 teaspoon dijon
1 single salt
1/2 teaspoon lemon juice
1/2 teaspoon wine vinegar
3 tablespoon oil
Whisk shallots and dijon. Add vinegar, whisking. Add oil slowly, whisking to keep from separating.
