2 12 ounce bags cranberries
1 1/2 cups sugar
1 cup orange juice
1 cup water
1 tablespoon grated orange peel
1 teaspoon ground ginger
1/2 cup crystallized ginger; minced

1 large red onion; thinly sliced
1/4 cup fresh lime juice
2 tablespoons fresh cilantro; chopped
2 teaspoons olive oil
1/2 teaspoon dried oregano
1/2 teaspoon salt
Mix all ingredients in large bowl. Cover and let stand 1 to 3 hours. (Can be made 2 days ahead. Cover and refrigerate.)

1 fresh serrano or jalapeño chili; seeded, chopped fine
1 tablespoon fresh gingerr; finely chopped

1 tablespoon butter
8 ounces mushrooms, sliced
1/8 teaspoon pepper
1 onion; thinly sliced
1/2 teaspoon worcestershire sauce
Melt butter in a small skillet. Add onion slices and cook and stir until tender. Stir in remaining ingredients and heat through. Serve hot over hamburgrer patties.

1 1/2 lb baby carrots
2 cup water
2 cup cider vinegar

3 cups cranberries
1 1/4 cups sugar
Cut unpeeled orange into eighths. Place orange, cranberries and sugar in food processor or blender and grind. Refrigerate for several hours to blendflavors. Store covered in refrigerator.
