4 large Portobello mushrooms; stemmed, cleaned
2 tablespoons fresh lemon juice
1 tablespoon Balsamic vinegar
2 clove garlic; minced to paste
  Salt; to taste

1 1/2 tablespoons unsalted butter
1 tablespoon shallot; minced
1 pound mushrooms; minced
  salt; to taste
  Freshly ground black pepper; to taste
In a skillet melt the butter over moderate heat and cook the shallot for about 30 seconds.
Add the chopped mushrooms, salt and pepper and cook until the liquid rendered from the mushrooms evaporates, about 10 minutes.
