Pumpkin Apple Butter

1 15 ounce can libby’s pumpkin
1 medium apple; peeled and grated
1 cup apple juice
1/2 cup Brown sugar; firmly packed
3/4 teaspoon pumpkin pie spice
Combine pumpkin, apple, apple juice, sugar and pumpkin pie spice in medium, heavy- duty saucepan.
Bring to a boil; reduce heat to low. Cook, stirring occasionally, for 1 1/2 hours.

Candied Citrus Peel Recipe

Peel  two grapefruits or three oranges, citrons, or lemons.

Making Crystallized Ginger

Cooking Chestnuts

Quick Chicken Stock

3 14 1/2 ounce cans chicken broth, low sodium
1/2 can water
1 medium celery rib; cut on the diagonal

Parmesan Tuiles

6 tablespoons Parmesan cheese
Place a 12-inch non-stick pan over medium-high heat.
Sprinkle 1 tablespoon of the Parmesan on the bottom of the pan.  When the cheese starts to bubble and turn golden brown remove melted cheese from pan.
Place cheese disc on rolling pin and press down.
