1/2 cup unsalted butter
1 1/2 cups yellow onion; chopped
1/4 cup flour
1 teaspoon kosher salt
1/2 teaspoon black pepper; freshly ground
2 cups defatted turkey drippings; plus chicken stock

1 pound sausage
1/4 cup flour
2 cups milk
salt and black pepper to taste
8 prepared biscuits
Crumble and cook sausage in large skillet over medium heat until browned.
Stir in flour until dissolved. Gradually stir in milk.
Cook gravy until thick and bubbly. If too thick add additional milk.
Season with salt and pepper.
Serve hot over biscuits.
Refrigerate leftovers.

4 turkey wings (about 3 lb)
2 medium onions, peeled and quartered
1 cup water
8 cups chicken broth
3/4 cup chopped carrot
1/2 tsp dried thyme
3/4 cup all-purpose flour
2 tbsp stick butter or margarine
1/2 tsp freshly ground pepper
