Strawberries and Mascarpone

4 cups strawberries; washed
1 cup mascarpone cheese
1/3 cup heavy cream; chilled
3 tablespoons Vin Santo wine
In a bowl with a whisk or an electric mixer beat together mascarpone, cream and Vin Santo until mixture holds stiff peakes.
Dip strawberries in whipped cream. Serve with biscotti.

Baked Apples with Raisins

2  apples
1  orange juice
1 tablespoon raisins
1  pinch ground cinnamon
Peel and core the apples.  Coat with the orange juice on the outer surface. Stuff with the raisins.  Sprinkle on the cinnamon.
Place in Pyrex baking cups.  Bake in a 350 F oven 25 to 30 minutes or until fork pierces surface easily.  Serve warm or cold.
