English Toffee

1 pound brown sugar
1 pound milk chocolate
1 pound butter
1 pound pecans or almonds
Cook sugar and butter, stirring constantly. Cook to hard crack stage (290 to 300°). Have buttered pans ready sprinkled with ground or finely chopped nuts. Pour candy over quickly. When cool put softened chocolate on, then nuts on top.

Mocha Truffles

11 1/2 oz milk chocolate chips
1/2 cup whipping cream
2 teaspoon instant coffee granules
2 teaspoon coffee-flavored liqueur
