Alcohol Substitutes for Cooking

Type of Alcohol
Substitute

Amaretto
Almond extract (1/2 teaspoon extract for 2 tablespoons of Amaretto).

Anisette
Anise Italian soda syrup or fennel.

Apple Brandy
Apple juice, unsweetened apple juice concentrate, apple cider, or apple butter.

Apricot Brandy
Syrup from a can of apricots in heavy syrup, or apricot preserves.

Beer or Ale
A strong chicken, beef or mushroom broth, or non-alcoholic beer.

Almond Paste Substitution

marzipan (sweeter and more pliable than almond paste)
can be substituted for almond paste.

Panko Substitution

 breadcrumbs (not as coarse, doesn’t stay crisp as long)
cracker crumbs
can be substituted for panko. 

Coating Mix Substitution

cornflake crumbs
or
bread crumbs
or
cracker crumbs
can be substituted for coating mix.
Note: Add salt, paprika, onion powder, pepper and other seasonings to taste.  

Roux Substitution

instant flour (mixed into paste first but doesn’t tolerate heating for long)
or
cornstarch (mixed into paste first but doesn’t tolerate heating for long)
or
potato starch
or
rice starch
can be substituted for roux.

Beurre Manie Substitution

roux (Cook sauce at least 30 minutes to get rid of the starchy flavor.)
can be substituted for beurre manie.

Onion Soup Mix Substitution

1/4 cup instant minced onion
plus
2 tablespoons beef bouillion
plus
1/2 teaspoon onion powder
can be substituted for a 1 3/8 ounce onion soup mix package. 
note: If using in uncooked recipes, refrigerate longer than usual.
